When you're getting ready to use your electric smoker for the first time, we recommend that you go through a curing process to minimize damage to the body of the smoker and prevent rusting on the inside. First, remove the water pan from inside the smoker. Then, spray all inside surfaces of the smoker with vegetable oil. Now all you have to do is plug the smoker in, cure it for 2 hours, and let it cool down completely before using it to smoke any meat or vegetables. Now you're ready to get started on a mouth-watering smoked barbecue meal. Start by filling the removable water pan with warm water or your choice of marinade all the way up to 1 inch below the rim. This raises the humidity of the cooking space so your food doesn't dry out while cooking. Then, add your choice of wood chips into the tray. When you want to smoke vegetables or cheeses, you'll want to add maple and if you're planning on smoking fish, we recommend that you add mulberry or alder. You can even create a personal blend of your favorite smoky flavors by mixing different wood chips together.
